CHICKEN & CUCUMBER LETTUCE WRAPS WITH PEANUT SAUCE

Ingredients

  • 1 tablespoon hoisin sauce (optional)
  • Salt and pepper to taste

For the Peanut Sauce:

  • 1/3 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar or lime juice
  • 1-2 tablespoons water (to thin)
  • Red pepper flakes (optional, to taste)

For the Wraps:

  • Butter lettuce or romaine leaves
  • Cucumber, thinly sliced
  • Carrots, shredded (optional)
  • Fresh herbs (like cilantro or mint, optional)

INSTRUCTIONS

  1. Cook the Chicken:
  • In a skillet, heat the vegetable oil over medium heat. Add garlic and ginger, sauté for about 1 minute.
  • Add ground chicken, breaking it apart as it cooks. Cook until browned and cooked through.
  • Stir in soy sauce, lime juice, and hoisin sauce (if using). Cook for another minute. Season with salt and pepper.
  1. Prepare the Peanut Sauce:
  • In a bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, and enough water to achieve your desired consistency. Add red pepper flakes if you want some heat.

  • Take a lettuce leaf and add a spoonful of the chicken mixture. Top with cucumber slices, shredded carrots, and herbs if desired.
  • Drizzle with peanut sauce.
