Ingredients:

  • Potatoes: 4 medium, peeled and cut into bite-sized cubes
  • Oil: 2-3 tablespoons (vegetable or canola oil)
  • Onion: 1 medium, finely chopped
  • Garlic: 3-4 cloves, minced
  • Ginger: 1-inch piece, minced
  • Bell Peppers: 1-2 (red or green), chopped
  • Tomatoes: 2 medium, finely chopped or 1 cup tomato puree
  • Green Chilies: 1-2, slit or chopped (adjust to taste)
  • Soy Sauce: 2 tablespoons
  • Chili Sauce: 2 tablespoons
  • Tomato Ketchup: 2 tablespoons
  • Vinegar: 1 tablespoon (optional)
  • Coriander Powder: 1 teaspoon
  • Cumin Powder: 1 teaspoon
  • Red Chili Powder: 1 teaspoon (adjust to taste)
  • Turmeric Powder: 1/2 teaspoon
  • Garam Masala: 1/2 teaspoon
  • Salt: to taste
  • Black Pepper: 1/2 teaspoon
  • Spring Onions or Fresh Coriander: for garnish

Instructions:

  1. Boil the Potatoes:
  • Place the potato cubes in a pot, cover with water, and add a pinch of salt.
  • Bring to a boil and cook until potatoes are tender (about 10 minutes). Drain and set aside.
  1. Prepare the Sauce:
  • Heat oil in a large pan or wok over medium heat.
  • Add finely chopped onions and sauté until they turn golden brown.
  • Add minced garlic and ginger, and sauté for another minute.
  1. Add Vegetables:
  • Add the chopped bell peppers and green chilies. Sauté for a couple of minutes.
  1. Add Tomatoes:
  • Stir in the chopped tomatoes or tomato puree. Cook until the tomatoes break down and the oil starts to separate from the mixture.
  1. Add Spices:
  • Mix in coriander powder, cumin powder, red chili powder, turmeric powder, and salt.
  • Cook for another 2 minutes until the spices are well-blended with the tomato mixture.
  1. Combine Potatoes:
  • Add the boiled potatoes to the pan. Stir gently to coat the potatoes with the sauce.
  1. Add Sauces:
  • Stir in soy sauce, chili sauce, and ketchup. Mix well to ensure all the potatoes are coated with the sauces.
  1. Simmer:
  • Let the mixture simmer for a few minutes, allowing the potatoes to absorb the flavors. If the mixture seems dry, add a little water.
  1. Final Touches:
  • Sprinkle garam masala and adjust seasoning with salt and pepper as needed.
  • Cook for an additional 2 minutes, then remove from heat.
  1. Garnish and Serve:
    • Garnish with chopped spring onions or fresh coriander.
    • Serve hot with steamed rice, naan, or as a side dish.
